3 easy breakfast recipes for Keto Diet

Hi,

I want to share 2 easy recipe for breakfast for Keto Diet.  

1.  QUICK FRITTATA WITH TOMATOES AND CHESSE


Ingredients:

  • 6 large eggs, free-range or organic
  • ½ medium white onion (55 g / 1.9 oz)
  • ⅔ cup soft cheese like feta, crumbled (100 g / 3.5 oz)
  • ⅔ cup cherry tomatoes, halved (100 g / 3.5 oz)
  • 1 tbsp ghee (you can make your own)
  • 2 tbsp freshly chopped herbs such as chives or basil
  • salt to taste (I used pink Himalayan)
  • freshly ground black pepper
   Methods:
    
    1. Preheat the oven (or ideally broiler if you have it) to 200 C / 400 F. Peel and slice the onion. Place on a hot pan greased with ghee and cook until lightly browned.

    2.  Crack the eggs into a bowl and season with salt and pepper. Add finely chopped herbs (I used chives) and whisk well.

   3. When the onion is browned, pour in the eggs and cook until you see the edges turning opaque. 

   4.  Top with the crumbled cheese and halved cherry tomatoes. Place under the broiler and cook for 5-7 minutes or until the top is cooked. Remove from the oven and set aside to cool down. Serve immediately or store in the fridge for up to 5 days.

   2.  CREAM CHEESE PANCAKES

INGREDIENTS



  • 2 oz cream cheese
  • 2 eggs
  • 1 tsp granulated sugar substitute
  • 1/2 tsp cinnamon

INSTRUCTIONS



  1. Put all ingredients in a blender or magic bullet. Blend until smooth.
  2. Let rest for 2 minutes so the bubbles can settle.
  3. Pour 1/4 of the batter into a hot pan greased with butter or pam spray.
  4. Cook for 2 minutes until golden, flip and cook 1 minute on the other side.
  5. Repeat with the rest of the batter.
  6. Serve with sugar free syrup (or any syrup of your choice) and fresh berries.

3Blackberry Egg Bake


Ingredients:

5 large eggs 
1 tbsp butter (melted) 
3 tbsps coconut flour 
1 tsp grated fresh ginger 
1/4 tsp vanilla 
1/3 tsp fine sea salt 
zest of 1/2 an orange 
1 tsp fresh rosemary (chopped fine) 
1/2 cup fresh blackberries

Instructions: 

1. Preheat oven to 350 F and grease four ramekins.
2. Place all of the ingredients except the fresh rosemary and blackberries into a blender and process about one or two minutes on high until the mixture is completely combined and smooth.
3. Add the rosemary and pulse a few times until rosemary is just combined.
4. Divide the egg mixture between the four ramekins and add blackberries to each ramekin.
5. Place the filled ramekins on a baking sheet and bake for fifteen to twenty minutes until the egg mixture puffs and is cooked through.
6. Cool on a rack a few minutes before indulging. Can be eaten in or popped out of the ramekins. Enjoy!
